Research approach
A market size is a claim about the world, and a claim is only as good as the route to it. Every study is built upward from units and prices — what is actually produced, sold or performed, at what it actually changes hands for — rather than from a headline figure divided downwards. Disclosed company revenue is then used to check that build, not to produce it.
The estimate is built upward from unit volumes and realised prices. Steam-jacketed kettle and tilting braising pan shipment volumes were established by capacity band (under 40 gallons, 40 to 80 gallons, above 80 gallons) and multiplied by average selling prices that vary with heating source (gas, electric, steam) and construction material. Combination kettle-braising units were sized separately given their distinct price point and faster adoption curve. The resulting bottom-up total was checked against disclosed segment revenue and shipment disclosures from the publicly reporting equipment manufacturers named in this report, and against foodservice capital-equipment spending patterns reported by restaurant and institutional catering associations. Where the two diverged, the unit-volume or price assumption was corrected; the two figures were not averaged.
The four stages
