Methodology

How the estimates were built: data sources, modelling approach and validation steps.

Research approach

A market size is a claim about the world, and a claim is only as good as the route to it. Every study is built upward from units and prices — what is actually produced, sold or performed, at what it actually changes hands for — rather than from a headline figure divided downwards. Disclosed company revenue is then used to check that build, not to produce it.

Market size estimation, this report

The estimate is built upward from pineapple stem and fruit processing volumes in the leading producing countries, converted into bromelain extraction yields by grade, and priced at realized per kilogram rates that differ between food grade, pharmaceutical grade and industrial grade material. Volumes are drawn from agriculture and food processing output data in Thailand, the Philippines, Costa Rica and Brazil, since feedstock availability there sets a ceiling on how much bromelain reaches the market each year. The bottom up build is then checked against the disclosed enzyme segment revenue of Advanced Enzymes Technologies and against recorded import and export volumes. Where the two disagreed, the underlying yield or price assumption was corrected rather than averaged against the disclosed figure.

The four stages

The same sequence runs behind every published study, whatever the industry. The order matters as much as the steps: the segment axes are fixed before any number is collected, so the model is never reshaped to fit whatever data happens to turn up.

What the build rests on, and what checks it

The two are not interchangeable. The left column produces the number; the right column tests it. When the check disagrees with the build, the answer is to find which bottom-up assumption is wrong — a unit count, a price, a take-up rate — not to split the difference between them.

The bottom-up build rests on
  • Volume actually transacted — units produced, installed, dispensed or procedures performed, counted at the level each is genuinely recorded
  • Realised pricing by tier and channel, rather than one blended average applied across the whole market
  • Take-up and frequency: how much of the addressable base buys, and how often it repeats
The build is checked against
  • Disclosed revenue of the companies serving the market, where filings separate it far enough to be usable
  • Buyer-side spending totals — capital budgets, procurement lines, or the output of the end market the product is bought against
  • Trade and customs flows, where the product crosses borders in a separately recorded form

Data sources

Published data establishes what happened. Only the people transacting in a market can say why, and what is about to change — so the two are collected separately and weighted differently.

Primary — who is interviewed
  • Commercial and product leadership at the companies that supply the market
  • Procurement and specification leads at the organisations that buy it
  • Distributors, integrators and channel partners, where the market is served indirectly
  • Regulatory and standards specialists, where approval governs what can be sold at all
Secondary — what is read
  • Company filings, annual reports and investor disclosure
  • Government statistics, customs records and regulatory registers
  • Trade association output and standards-body publications
  • Technical and peer-reviewed literature, where the market rests on a clinical or engineering claim
Primary research design, this report

Primary interviews target procurement and R&D leads at dietary supplement and pharmaceutical formulators, purchasing managers at meat and seafood processors, and regulatory affairs staff responsible for pharmaceutical grade qualification, since these roles set volume commitments and grade specifications. Enzyme ingredient distributors and trading houses are included to capture pricing and channel mix outside direct producer contracts. Sampling weights North America and Europe, where supplement and pharmaceutical grade demand concentrates, alongside India, China and Thailand, where production and food grade consumption concentrate. This mix is chosen so that the demand side and the supply side of the market are both represented, not just the buyers or just the producers.

Secondary sources, this report

Secondary research draws on the US FDA's GRAS notification inventory and the European Food Safety Authority's food enzyme register for regulatory status by grade, HS code 3507.90 customs trade data for cross border shipment volumes, and USP-NF and European Pharmacopoeia monograph references for pharmaceutical grade purity specification. Advanced Enzymes Technologies' listed financial filings supply a disclosed revenue benchmark for the enzyme segment. FAO pineapple production statistics for Thailand, the Philippines, Costa Rica and Brazil anchor the feedstock volume assumptions that the bottom up build starts from.

Desk research runs across proprietary research databases including Factiva, OneSource and Hoovers alongside the public sources above. Modelling and statistical validation are run in SAS and SPSS.

Forecasting

The forecast is not a growth rate applied to a base year. It is built from the drivers that are expected to change, each one stated so a reader can disagree with it.

Forecast approach, this report

The forecast carries forward growth in supplement and self care demand, the pace at which pharmaceutical formulators complete grade qualification for new bromelain based products, and continued substitution of bromelain for older mechanical or chemical tenderizing methods in meat and seafood processing. Pricing is assumed to normalize as stem sourced volumes expand faster than fruit sourced volumes, easing the feedstock cost pressure recorded in parts of the historical period. For the forecast to hold, pineapple processing capacity in the top producing countries needs to keep pace with extraction demand, and no major low cost synthetic protease needs to gain regulatory acceptance in the food grade tier.

Triangulation and validation

No figure enters a report on the strength of one source. Where the two sizing routes disagree the difference is not averaged away — the assumption causing it is isolated, tested against a third independent measure, and either corrected or carried forward as a stated limitation. Historical years are back-tested against the growth actually recorded before any forecast is allowed to run forward from them.

Validation, this report

Outputs are back tested against recorded production and shipment growth for 2020 through 2024 in the top producing countries, checking that the estimate's historical trajectory matches what actually moved through customs and processing records, not just the base year figure alone. Segment share shifts, including the move toward pharmaceutical grade and fruit sourced material, were reviewed against interview input from formulators making that switch. Sensitivities were tested on feedstock price, since it is the input most exposed to a single poor harvest season, and on the pace of pharmaceutical grade qualification, since a slower approval cycle would shift volume back toward the food grade tier.

Confidence and limitations

Where an estimate is firm and where it is not is stated rather than left to be inferred from the precision of the number.

Confidence framing, this report

Confidence is firmest in the food grade and meat processing segments, where production and trade volumes are recorded in national statistics and can be checked directly. It is weaker in the pharmaceutical grade split and in country level detail outside Thailand, India, China, Costa Rica and Brazil, where reporting is thinner and estimates lean more on interview input. The main structural risk is feedstock concentration: a poor pineapple harvest in one or two producing countries could tighten supply and shift pricing across every grade before the next data cycle can capture it.
